  • 1 cup ripe tomatoes, diced

  • Salt to taste

Instructions

  1. Rinse shrimp under cold water and pat dry.
  2. In a bowl, cover shrimp completely with lime juice. Cover tightly and let marinate in the fridge for 30 minutes until opaque.
  3. Drain some excess lime juice, then add red onion, tomatoes, jalapeño, and cilantro to the shrimp. Stir gently to combine.
  4. Season with salt to taste and chill for an additional 15 minutes before serving.
  5. Serve chilled in small bowls, optionally garnished with extra cilantro or avocado slices.
