Ingredients
  

Meatballs
  • 1 pound ground pork
  • 1 tablespoon fish sauce
  • 1 tablespoon fresh cilantro, chopped
  • 1 teaspoon garlic, minced
  • 1 teaspoon ginger, grated
  • 1 tablespoon green onion, chopped
Soup Base
  • 6 cups chicken broth
  • 2 large eggs
  • 1 cup bok choy, chopped
  • 1 tablespoon soy sauce
  • 1 teaspoon lime juice
  • 1 teaspoon red pepper flakes optional

Method
 

Prepare Meatballs
  1. In a bowl, combine ground pork, fish sauce, cilantro, garlic, ginger, and green onion. Mix well and form into small meatballs.
Make Soup
  1. In a large pot, bring chicken broth to a boil. Add meatballs and cook until they are cooked through.
  2. Reduce heat and slowly add beaten eggs while stirring to create egg ribbons.
  3. Stir in bok choy, soy sauce, lime juice, and red pepper flakes. Simmer for a few minutes.
