Ingredients
  

Tamale Dough
  • 2 cups masa harina
  • 1 cup vegetable broth
  • 1/2 cup coconut oil melted
  • 1 teaspoon baking powder
  • 1 teaspoon salt
Jackfruit Filling
  • 1 can young green jackfruit drained and shredded
  • 1 tablespoon olive oil
  • 1 cup onion chopped
  • 2 cloves garlic minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 cup vegetable broth
  • 1 cup corn
  • 1 cup bell pepper chopped

Method
 

Prepare the Dough
  1. In a mixing bowl, combine masa harina, vegetable broth, melted coconut oil, baking powder, and salt. Mix until a dough forms.
Prepare the Filling
  1. In a food processor, blend the shredded jackfruit, olive oil, onion, garlic, cumin, chili powder, vegetable broth, corn, and bell pepper until well combined.
Assemble the Tamales
  1. Spread a portion of the dough onto a corn husk, add a spoonful of the jackfruit filling, and fold the husk over. Repeat with remaining ingredients.
Steam the Tamales
  1. Place the tamales upright in a steamer and steam for about 60 minutes or until the dough is firm.
