Vegetables
  • 2 medium eggplants sliced
  • 2 medium zucchinis sliced
  • 4 medium potatoes sliced
  • 1 cup tomato sauce homemade or store-bought
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon olive oil for drizzling

Method
 

Preparation
  1. Preheat the oven to 180°C (350°F).
  2. Slice the eggplants, zucchinis, and potatoes.
  3. In a baking dish, layer the sliced vegetables, starting with potatoes, followed by eggplants and zucchinis.
  4. Pour the tomato sauce over the layered vegetables and season with salt and pepper.
  5. Drizzle olive oil on top.
Baking
  1. Cover the baking dish with foil and bake for 45 minutes.
  2. Remove the foil and bake for an additional 15 minutes until the top is golden.
