Ingredients
  

Rice
  • 2 cups Sushi rice
  • 2 cups Water
Tuna Mixture
  • 1 cup Sushi-grade tuna finely diced
  • 2 tablespoons Mayonnaise preferably Kewpie
  • 1 teaspoon Sriracha adjust to taste
  • 1 teaspoon Soy sauce
  • 1 teaspoon Sesame oil
Toppings
  • 2 tablespoons Green onions sliced
  • 1 tablespoon Sesame seeds toasted
For Frying
  • 1 cup Vegetable oil for frying

Method
 

Prepare Rice
  1. Rinse sushi rice under cold water until water runs clear. Cook rice with water in a rice cooker.
Make Tuna Mixture
  1. In a bowl, combine diced tuna, mayonnaise, Sriracha, soy sauce, and sesame oil. Mix well.
Fry Rice
  1. Once rice is cooked, let it cool and then form into small squares. Heat oil in a frying pan and fry the rice squares until golden and crispy.
Assemble
  1. Top each crispy rice square with a spoonful of the tuna mixture. Garnish with green onions and sesame seeds.
