Ingredients
  

Marinade
  • 4 lbs short ribs bone-in
  • 1 cup red wine for marinating
  • 1 cup olive oil
  • 1 cup prunes pitted
  • 1 cup green olives pitted and sliced
  • 1 cup capers drained
  • 2 tbsp garlic minced
  • 1 tbsp oregano dried
  • 1 tbsp thyme dried
  • 1 tbsp black pepper freshly ground

Method
 

Preparation
  1. Marinate the short ribs in red wine, olive oil, prunes, olives, capers, garlic, oregano, thyme, and black pepper for at least 12 hours.
  2. Preheat the oven to 350°F (175°C).
Cooking
  1. Place the marinated short ribs in a Dutch oven and cover with the marinade.
  2. Cover and cook in the preheated oven for 3 hours or until tender.
