Base Ingredients
  • 2 tablespoons olive oil
  • 1 large onion chopped
  • 2 cloves garlic minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 can chopped tomatoes
  • 4 large eggs
  • salt to taste
  • pepper to taste
Garnish
  • 1 bunch fresh parsley chopped
  • 1 feta cheese crumbled

Method
 

Preparation
  1. Preheat the oven to 200°C (400°F).
  2. Heat olive oil in a frying pan over medium heat. Add chopped onion and cook until soft.
  3. Stir in minced garlic, cumin, and paprika, cooking for another minute.
  4. Add chopped tomatoes, season with salt and pepper, and simmer for 10 minutes.
  5. Transfer the mixture to a baking tray and make wells for the eggs.
  6. Crack the eggs into the wells and bake in the oven for 15-20 minutes until the eggs are set.
  7. Remove from the oven and garnish with chopped parsley and crumbled feta cheese.
