Ingredients
  

Hummus Base
  • 2 cups cooked lentils
  • 2 medium carrots roasted
  • 1 tablespoon tahini
  • 2 tablespoons olive oil
  • 1 clove garlic minced
  • 1 lemon juice
  • 1 teaspoon cumin
Garnish
  • 1 tablespoon fresh parsley chopped
  • 1 tablespoon sesame seeds

Method
 

Prepare the Carrots
  1. Preheat the oven to 400°F (200°C). Peel and chop the carrots, then toss them with olive oil, salt, and pepper.
  2. Spread the carrots on a baking sheet and roast for about 25-30 minutes until tender and caramelized.
Make the Hummus
  1. In a blender, combine the roasted carrots, cooked lentils, tahini, garlic, lemon juice, and cumin. Blend until smooth.
  2. Adjust seasoning with salt and pepper as needed.
Serve
  1. Transfer the hummus to a serving bowl, garnish with chopped parsley and sesame seeds.
  2. Serve with pita bread or fresh vegetables.
