Prepare the Carrots
- Preheat the oven to 400°F (200°C). Peel and chop the carrots, then toss them with olive oil, salt, and pepper.
- Spread the carrots on a baking sheet and roast for about 25-30 minutes until tender and caramelized.

- In a blender, combine the roasted carrots, cooked lentils, tahini, garlic, lemon juice, and cumin. Blend until smooth.
- Adjust seasoning with salt and pepper as needed.
Serve
- Transfer the hummus to a serving bowl, garnish with chopped parsley and sesame seeds.
- Serve with pita bread or fresh vegetables.
