  • 2 medium beetroots peeled and diced
  • 2 medium parsnips peeled and diced

  • 1 tablespoon balsamic vinegar
  • 1 teaspoon honey

Method
 

Roasting the Vegetables
  1. Preheat the oven to 200°C (400°F).
  2. Toss the diced beetroot and parsnips with olive oil, salt, and pepper.
  3. Spread the vegetables on a baking tray and roast for 25-30 minutes until tender.
Assembling the Salad
  1. In a mixing bowl, combine the roasted vegetables, sliced apple, and dried cranberries.
  2. Drizzle with balsamic vinegar and honey, then toss to combine.
  3. Serve warm or at room temperature.
