Ingredients
  

Rice Kheer
  • 1 cup rice preferably basmati
  • 4 cups milk whole milk recommended
  • 1/2 cup sugar adjust to taste
  • 1/4 teaspoon cardamom powder
  • 1 tablespoon ghee for cooking
Berry Compote
  • 2 cups mixed berries fresh or frozen
  • 1/4 cup sugar to sweeten the compote
  • 1 tablespoon lemon juice for acidity

Method
 

Prepare Rice Kheer
  1. Rinse the rice until the water runs clear.
  2. In a saucepan, combine the rinsed rice and milk. Cook over medium heat.
  3. Add sugar and cardamom powder once the mixture starts to boil.
  4. Simmer until the rice is cooked and the mixture thickens.
  5. Stir in ghee before removing from heat.
Prepare Berry Compote
  1. In a mixing bowl, combine mixed berries, sugar, and lemon juice.
  2. Cook over medium heat until the berries break down and the mixture thickens.
  3. Remove from heat and let cool before serving.
Serve
  1. Spoon the rice kheer into bowls and top with berry compote.
