Ingredients
  

Ice Cream Base
  • 2 cups heavy cream
  • 1 cup whole milk
  • 3/4 cup sugar
  • 1 teaspoon vanilla extract
Filling
  • 1 cup rhubarb, chopped
  • 1 cup strawberries, sliced
  • 1/4 cup sugar for macerating
Cookies
  • 1 cup butter, softened
  • 1 cup brown sugar
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt

Method
 

Prepare Ice Cream
  1. In a mixing bowl, whisk together heavy cream, whole milk, sugar, and vanilla extract until combined.
  2. Pour the mixture into an ice cream maker and churn according to manufacturer's instructions.
  3. Transfer to a container and freeze for at least 2 hours.
Prepare Filling
  1. In a bowl, combine rhubarb, strawberries, and sugar. Let sit for 30 minutes to macerate.
Make Cookies
  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, cream together butter and brown sugar until smooth.
  3. Add flour, baking soda, and salt. Mix until combined.
  4. Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
  5. Bake for 10-12 minutes or until golden brown. Let cool.
Assemble Sandwiches
  1. Take one cookie, add a scoop of ice cream, and top with macerated fruit. Place another cookie on top.
  2. Repeat with remaining cookies and filling.
