Cookie Base
  • 1 cup butter softened
  • 1 cup brown sugar packed
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1 cup pineapple chunks drained
Topping
  • 1/2 cup maraschino cherries for decoration

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, cream together the softened butter and brown sugar until smooth.
  3. Add in the flour, baking soda, and vanilla extract, mixing until combined.
  4. Fold in the pineapple chunks gently.
Baking
  1. Scoop the cookie dough onto a baking sheet lined with parchment paper.
  2. Top each cookie with a maraschino cherry.
  3. Bake in the preheated oven for 10-12 minutes or until golden brown.
  4. Allow to cool before serving.
