Ingredients
  

Batter
  • 1 cup all-purpose flour
  • 1 cup milk
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
Pineapple
  • 2 cups fresh pineapple chunks or canned, drained
Oil
  • 2 cups vegetable oil for frying

Method
 

Prepare the batter
  1. In a mixing bowl, whisk together the flour, sugar, baking powder, and milk until smooth.
  2. Add the vanilla extract and mix well.
Fry the fritters
  1. Heat the vegetable oil in a frying pan over medium heat.
  2. Dip the pineapple chunks into the batter, then carefully place them in the hot oil.
  3. Fry until golden brown on both sides, about 3-4 minutes per side.
  4. Remove from oil and drain on paper towels.
Serve
  1. Serve warm, optionally dusted with powdered sugar.
