A classic French dessert made of layers of almond sponge cake soaked in coffee syrup, layered with coffee buttercream and chocolate ganache.

Ingredients
  

Cake Layers
  • 4 large eggs
  • 100 g sugar
  • 100 g almond flour
  • 30 g all-purpose flour
  • 30 g butter melted
Coffee Syrup
  • 100 ml strong coffee
  • 50 g sugar
Buttercream
  • 200 g butter softened
  • 200 g powdered sugar
  • 30 ml coffee
Ganache
  • 200 g dark chocolate chopped
  • 100 ml heavy cream

Method
 

Prepare Cake Layers
  1. Preheat the oven to 180°C (350°F). In a mixing bowl, whisk eggs and sugar until light and fluffy. Fold in almond flour and all-purpose flour, then add melted butter.
  2. Pour the batter into a baking pan and bake for 20-25 minutes until golden. Let cool.
Make Coffee Syrup
  1. In a saucepan, combine strong coffee and sugar. Heat until sugar dissolves. Let cool.
Prepare Buttercream
  1. Beat softened butter until creamy. Gradually add powdered sugar and mix well. Add coffee and mix until smooth.
Make Ganache
  1. Heat heavy cream until just boiling, then pour over chopped dark chocolate. Let sit for a few minutes, then stir until smooth.
Assemble Cake
  1. Cut the cake layers into equal parts. Soak each layer with coffee syrup, spread buttercream between layers, and top with ganache.
  2. Chill the assembled cake for at least 1 hour before serving.

For best results, use high-quality chocolate and coffee.
