  • 1 pound boneless chicken thighs cut into bite-sized pieces
  • 4 large eggs
  • 1 cup dashi broth
  • 1 tablespoon soy sauce
  • 1 tablespoon mirin
  • 2 green onions sliced

Method
 

Cooking Instructions
  1. In a large skillet, combine dashi broth, soy sauce, and mirin. Bring to a simmer.
  2. Add chicken pieces and cook until they are no longer pink.
  3. Beat the eggs in a bowl and pour over the chicken. Cover and cook until the eggs are set.
  4. Serve the chicken and egg mixture over cooked rice and garnish with sliced green onions.
