Mujadara (Lentils and Rice)

Ingredients
  

Lentils and Rice
  • 1 cup Lentils Rinsed
  • 1 cup Rice Rinsed
  • 4 cups Water
  • 2 tablespoons Olive Oil For cooking
  • 1 large Onion Thinly sliced
  • 1 teaspoon Cumin
  • Salt to taste Salt
  • Pepper to taste Pepper

Method
 

Cooking the Lentils and Rice
  1. In a pot, heat olive oil over medium heat and add sliced onions. Cook until caramelized.
  2. Add lentils and water to the pot. Bring to a boil, then reduce heat and simmer for 15 minutes.
  3. Stir in rice, cumin, salt, and pepper. Cover and cook for an additional 15 minutes until rice is tender.
  4. Fluff with a fork and serve warm.
