Ingredients
  

Dough
  • 2 cups all-purpose flour
  • 1 cup mochi flour
  • 1 tablespoon matcha powder
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1 cup unsalted butter cold and cubed
  • 1 cup milk warm
  • 1 tablespoon yeast
Filling
  • 1 cup sweet red bean paste

Method
 

Prepare Dough
  1. In a mixing bowl, combine all-purpose flour, mochi flour, matcha powder, sugar, and salt.
  2. Cut in the cold butter until the mixture resembles coarse crumbs.
  3. Add warm milk and yeast, mixing until a dough forms.
  4. Knead the dough for about 5 minutes until smooth.
  5. Let the dough rise in a warm place for 1 hour.
Assemble Croissants
  1. Roll out the dough into a rectangle.
  2. Cut the dough into triangles and place a spoonful of red bean paste at the base.
  3. Roll the triangles from the base to the tip to form croissants.
  4. Place on a baking sheet and let rise for another 30 minutes.
  5. Preheat the oven to 375°F (190°C) and bake for 20 minutes until golden brown.
