Ingredients
  

Base Ingredients
  • 2 cups Japanese sweet potatoes peeled and cubed
  • 1 cup heavy cream
  • 1/2 cup granulated sugar
  • 4 large egg yolks
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
Topping
  • 1/4 cup brown sugar for caramelizing

Method
 

Preparation
  1. Preheat the oven to 325°F (163°C).
  2. Boil the sweet potatoes until tender, then drain and mash.
  3. In a mixing bowl, whisk together the heavy cream, sugar, egg yolks, vanilla extract, and salt.
  4. Fold the mashed sweet potatoes into the cream mixture until well combined.
  5. Pour the mixture into ramekins.
  6. Place the ramekins in a baking dish and fill the dish with hot water until it reaches halfway up the sides of the ramekins.
  7. Bake for 40-45 minutes until set.
Finishing Touch
  1. Remove from the oven and let cool.
  2. Sprinkle brown sugar evenly over the top of each ramekin.
  3. Using a blow torch, caramelize the sugar until golden brown.
  4. Let cool slightly before serving.

Notes
