  • 2 cups mixed greens
  • 1 cup cherry tomatoes halved
  • 1 cup bell pepper sliced
  • 1 cup red onion sliced
  • 1 pound chicken breast grilled and sliced
  • 1 avocado sliced
  • 1 cup cilantro chopped
Dressing
  • 3 tablespoons olive oil
  • 2 tablespoons lime juice
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1 teaspoon pepper

Method
 

Prepare the Chicken
  1. Preheat the grill to medium-high heat. Season the chicken breast with salt, pepper, and cumin.
  2. Grill the chicken for 6-7 minutes on each side or until fully cooked. Remove from grill and let rest before slicing.
Assemble the Salad
  1. In a large mixing bowl, combine mixed greens, cherry tomatoes, bell pepper, red onion, and cilantro.
  2. Add the sliced grilled chicken and avocado on top.
  3. Drizzle with olive oil and lime juice dressing, then toss gently to combine.
