Ingredients
  

Dough
  • 2 cups gluten-free flour
  • 1/2 cup butter cold and cubed
  • 1/4 cup sugar
  • 1 large egg
  • 1 tbsp matcha powder
  • 1/4 tsp salt
Filling
  • 1/2 cup jam or fruit filling your choice
Glaze
  • 1 cup powdered sugar
  • 1-2 tbsp milk to achieve desired consistency
  • 1 tsp matcha powder

Method
 

Prepare the Dough
  1. In a mixing bowl, combine gluten-free flour, butter, sugar, egg, matcha powder, and salt. Mix until a dough forms.
  2. Wrap the dough in plastic wrap and refrigerate for 30 minutes.
Assemble the Pop Tarts
  1. Preheat the oven to 350°F (175°C).
  2. Roll out the dough on a floured surface and cut into rectangles.
  3. Place a spoonful of jam in the center of half the rectangles, then top with the remaining rectangles.
  4. Seal the edges with a fork and place on a baking sheet.
Bake and Glaze
  1. Bake in the preheated oven for 20 minutes or until golden brown.
  2. While baking, mix powdered sugar, milk, and matcha powder to create the glaze.
  3. Once the pop tarts are cool, drizzle the glaze over them.
