Frozen Watermelon Lemon Cream Tarts

Ingredients
  

Crust
  • 1 cup graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup butter, melted
Filling
  • 2 cups watermelon, pureed
  • 1/2 cup lemon juice
  • 1 cup heavy cream
  • 1/4 cup powdered sugar

Method
 

Prepare the crust
  1. In a bowl, mix graham cracker crumbs, sugar, and melted butter until combined.
  2. Press the mixture into the bottom of tart pans.
  3. Chill in the refrigerator for 30 minutes.
Make the filling
  1. Blend the pureed watermelon and lemon juice until smooth.
  2. In a separate bowl, whip heavy cream and powdered sugar until stiff peaks form.
  3. Gently fold the watermelon mixture into the whipped cream.
Assemble the tarts
  1. Pour the filling into the chilled crusts.
  2. Freeze for at least 4 hours or until firm.
  3. Serve chilled.
