Ingredients
  

Chia Pudding
  • 1/4 cup chia seeds
  • 1 cup almond milk
  • 1 tablespoon maple syrup or sweetener of choice
  • 1/2 teaspoon vanilla extract
Pumpkin Mixture
  • 1/2 cup pumpkin puree
  • 1/2 teaspoon pumpkin spice
  • 1/4 teaspoon cinnamon

Method
 

Prepare Chia Pudding
  1. In a mixing bowl, combine chia seeds, almond milk, maple syrup, and vanilla extract. Whisk well and let sit for 5 minutes.
  2. After 5 minutes, whisk again to prevent clumping and refrigerate for at least 30 minutes until it thickens.
Combine with Pumpkin
  1. In a separate bowl, mix pumpkin puree, pumpkin spice, and cinnamon until well combined.
  2. Once the chia pudding has thickened, fold in the pumpkin mixture until fully incorporated.
Serve
  1. Spoon the mixture into serving bowls and enjoy chilled.
