  • 2 cups elbow macaroni uncooked
  • 4 large eggs hard-boiled and chopped
  • 1 cup mayonnaise
  • 2 tablespoons mustard yellow or Dijon
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 cup celery chopped
  • 1 cup green onions chopped

Method
 

Preparation
  1. Cook the elbow macaroni according to package instructions, then drain and cool.
  2. In a large mixing bowl, combine the mayonnaise, mustard, salt, and pepper.
  3. Add the chopped eggs, celery, and green onions to the bowl and mix well.
  4. Fold in the cooled macaroni until everything is evenly coated.
  5. Chill in the refrigerator for at least 30 minutes before serving.
