Ingredients
  

Matzo Balls
  • 1 cup matzo meal
  • 2 large eggs
  • 1/4 cup water
  • 1 teaspoon salt
  • 1 tablespoon olive oil
Pozole Broth
  • 6 cups chicken broth
  • 1 can hominy drained and rinsed
  • 1 cup shredded chicken
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 tablespoon lime juice
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1 teaspoon chili powder
  • 1 cup fresh cilantro for garnish

Method
 

Prepare Matzo Balls
  1. In a mixing bowl, combine matzo meal, eggs, water, salt, and olive oil. Mix until well combined.
  2. Refrigerate the mixture for 30 minutes.
  3. Form the mixture into balls about the size of a golf ball.
Make Pozole Broth
  1. In a large pot, combine chicken broth, hominy, shredded chicken, onion, garlic, lime juice, cumin, oregano, and chili powder. Bring to a boil.
  2. Reduce heat and let simmer for 30 minutes.
Cook Matzo Balls
  1. Add matzo balls to the simmering broth. Cover and cook for an additional 20 minutes.
Serve
  1. Ladle the pozole into bowls and garnish with fresh cilantro.
