Crispy Masala Dosa

Ingredients
  

Dosa Batter
  • 1 cup rice soaked
  • 1/4 cup urad dal soaked
  • 1 cup water for blending
Filling
  • 2 medium potatoes boiled and mashed
  • 1 onion finely chopped
  • 1 teaspoon mustard seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon cumin seeds
  • 2 tablespoons oil for cooking
  • to taste salt

Method
 

Prepare Dosa Batter
  1. Blend soaked rice and urad dal with water to a smooth batter.
  2. Let the batter ferment for 8 hours or overnight.
Prepare Filling
  1. Heat oil in a pan, add mustard seeds and let them splutter.
  2. Add onions and sauté until translucent.
  3. Add turmeric, cumin, and mashed potatoes. Mix well and season with salt.
Cook Dosa
  1. Heat the griddle and pour a ladle of batter, spreading it evenly.
  2. Cook until the edges turn golden brown, then add filling and fold.
