Method
Prepare the dough
- In a mixing bowl, combine flour and salt. Gradually add boiling water and mix until a dough forms.
- Knead the dough on a floured surface for about 5 minutes until smooth. Cover and let it rest for 30 minutes.
Make the pancakes
- Divide the dough into 4 equal pieces. Roll out each piece into a thin circle.
- Brush with sesame oil, sprinkle with chopped scallions, and roll tightly. Coil the rolled dough into a spiral and flatten gently.
- Heat vegetable oil in a frying pan over medium heat. Fry each pancake for about 3-4 minutes on each side until golden brown and crispy.
