Ingredients
  

Vegetables
  • 2 cups cherry tomatoes confit
  • 1 large aubergine sliced
  • 1 tablespoon olive oil for cooking
  • 1 teaspoon salt
  • 1 teaspoon black pepper
Pastry
  • 1 sheet puff pastry thawed if frozen

Method
 

Prepare the Vegetables
  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat olive oil and sauté the sliced aubergine until golden brown.
  3. Add the confit tomatoes and season with salt and pepper.
Assemble the Tarte Tatin
  1. Transfer the vegetable mixture to a tart pan.
  2. Cover with the puff pastry, tucking the edges in.
Bake
  1. Bake in the preheated oven for 30-35 minutes or until the pastry is golden.
  2. Let it cool for a few minutes before inverting onto a plate.
