  • 1 can black beans drained and rinsed
  • 1 cup corn frozen or canned
  • 1 cup cheddar cheese shredded
  • 1 cup chicken broth
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp salt
  • 1 tsp pepper

Method
 

Cooking Instructions
  1. In a large pot, sauté the diced chicken until browned.
  2. Add the rice, black beans, corn, chicken broth, cumin, chili powder, salt, and pepper.
  3. Bring to a boil, then reduce heat and cover, simmering for 20 minutes.
  4. Stir in the cheddar cheese until melted and creamy.
