Ingredients
  

Eggs
  • 4 large eggs fresh
Yogurt Sauce
  • 1 cup plain yogurt preferably Greek
Butter Sauce
  • 4 tablespoons butter unsalted
  • 1 teaspoon paprika for flavor
Seasoning
  • to taste salt
  • to taste black pepper

Method
 

Prepare the Yogurt
  1. In a bowl, mix the yogurt with salt and pepper to taste.
Poach the Eggs
  1. Bring a saucepan of water to a gentle simmer. Crack the eggs into the water and poach for about 3-4 minutes until whites are set.
Make the Butter Sauce
  1. In a small saucepan, melt the butter and add paprika. Stir well.
Assemble the Dish
  1. Place a generous spoonful of yogurt on a plate, top with poached eggs, and drizzle with the butter sauce.
