Ingredients
  

Crepes
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup milk
  • 1 tablespoon butter melted
Filling
  • 2 cups cooked chicken shredded
  • 1 cup mixed vegetables steamed
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 cup cheese shredded

Method
 

Make the Crepes
  1. In a mixing bowl, whisk together flour, eggs, milk, and melted butter until smooth.
  2. Heat a crepe pan over medium heat and pour in a small amount of batter, swirling to coat the pan.
  3. Cook for 1-2 minutes until the edges lift, then flip and cook for another minute.
Prepare the Filling
  1. In a bowl, combine shredded chicken, mixed vegetables, garlic powder, onion powder, and cheese.
  2. Mix well until all ingredients are evenly distributed.
Assemble the Crepe Pockets
  1. Place a portion of the filling in the center of each crepe.
  2. Fold the crepe over the filling and serve warm.
