Ingredients
  

For the Chicken Alfredo
  • 1 large spaghetti squash
  • 2 cups cooked chicken shredded or diced
  • 1 cup heavy cream
  • 1 cup parmesan cheese grated
  • 2 tablespoons butter
  • 2 cloves garlic minced
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon Italian seasoning

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C). Cut the spaghetti squash in half lengthwise and scoop out the seeds.
  2. Place the squash halves cut side down on a baking dish and bake for 30-40 minutes until tender.
  3. In a skillet, melt the butter over medium heat. Add minced garlic and sauté until fragrant.
  4. Stir in the heavy cream, salt, pepper, and Italian seasoning. Bring to a simmer.
  5. Add the cooked chicken and parmesan cheese to the sauce, stirring until the cheese is melted.
  6. Once the squash is done, scrape the insides with a fork to create spaghetti-like strands.
  7. Serve the chicken alfredo sauce over the spaghetti squash strands.
