  • 4 pieces chicken thighs boneless, skinless
  • 1 cup red wine preferably Burgundy
  • 2 cups mushrooms sliced
  • 1 cup carrots sliced
  • 1 cup onion chopped
  • 2 cloves garlic minced
  • 2 tablespoons olive oil
  • 1 teaspoon thyme dried
  • 1 teaspoon bay leaf

Method
 

Cooking Steps
  1. Heat olive oil in a large skillet over medium heat.
  2. Add chicken thighs and cook until browned on both sides.
  3. Remove chicken and set aside. In the same skillet, add onions, carrots, and mushrooms.
  4. Sauté until vegetables are tender.
  5. Stir in garlic, thyme, and bay leaf, cooking for an additional minute.
  6. Pour in red wine and bring to a simmer.
  7. Return chicken to the skillet, cover, and cook for 25 minutes.
  8. Season with salt and pepper to taste before serving.
