Tart Base
  • 1 sheet puff pastry thawed
Filling
  • 2 cups onions sliced
  • 1 cup goat cheese crumbled
  • 2 tablespoons olive oil
  • 1 teaspoon thyme fresh or dried
  • salt to taste
  • pepper to taste

Method
 

Prepare the Onions
  1. Heat olive oil in a pan over medium heat. Add sliced onions and cook until caramelized, about 20-25 minutes.
Assemble the Tarts
  1. Preheat the oven to 400°F (200°C). Roll out the puff pastry and cut into squares. Place on a baking sheet.
  2. Spread the caramelized onions over the pastry squares, then top with crumbled goat cheese and thyme.
Bake
  1. Bake in the preheated oven for 15-20 minutes or until the pastry is golden brown.
