  • 4 fillets catfish
Cajun Seasoning
  • 2 tablespoons Cajun seasoning
Coating
  • 1 cup cornmeal
  • 1 cup flour
  • 1 teaspoon salt
  • 1 teaspoon black pepper
Oil
  • 2 tablespoons olive oil

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Line a baking sheet with parchment paper.
  3. In a mixing bowl, combine cornmeal, flour, salt, and black pepper.
  4. Coat the catfish fillets in Cajun seasoning, then dip in the coating mixture.
  5. Place the coated fillets on the prepared baking sheet.
  6. Drizzle olive oil over the fillets.

  1. Bake in the preheated oven for 15 minutes or until crispy and cooked through.
