Ingredients
  

Crust
  • 1 cup graham cracker crumbs
  • 1/4 cup butter, melted
  • 2 tablespoons sugar
Filling
  • 8 ounces baby Swiss cheese, shredded
  • 16 ounces cream cheese, softened
  • 1/2 cup sour cream
  • 1/2 cup sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract

Method
 

Prepare the Crust
  1. Preheat the oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs, melted butter, and sugar. Press the mixture into the bottom of a springform pan.
Make the Filling
  1. In a mixing bowl, beat together the baby Swiss cheese, cream cheese, sour cream, and sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
Bake
  1. Pour the filling over the crust in the springform pan. Bake for 30 minutes or until the center is set. Allow to cool before serving.
