Ingredients
  

For the Toast
  • 4 slices Whole grain bread
  • 2 ripe Avocados mashed
For the Topping
  • 4 ounces Smoked salmon sliced
  • 4 large Eggs for poaching
  • to taste Salt
  • to taste Pepper
  • 1 tablespoon Lemon juice optional

Method
 

Prepare the Toast
  1. Toast the slices of whole grain bread until golden brown.
  2. Mash the ripe avocados in a bowl and season with salt, pepper, and lemon juice if using.
Poach the Eggs
  1. Bring a saucepan of water to a gentle simmer.
  2. Crack each egg into a small bowl and gently slide it into the simmering water.
  3. Cook for about 3-4 minutes until the whites are set but the yolks are still runny.
  4. Use a slotted spoon to remove the eggs and drain on paper towels.
Assemble the Toast
  1. Spread the mashed avocado evenly on each slice of toast.
  2. Top each slice with smoked salmon and a poached egg.
  3. Season with additional salt and pepper to taste.
