Ingredients
  

Pasta
  • 1 cup orzo pasta uncooked
Vegetables
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1/2 cup red onion finely chopped
Antipasti
  • 1/2 cup kalamata olives pitted and sliced
  • 1/2 cup pepperoncini sliced
  • 1/2 cup artichoke hearts chopped
Dressing
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Method
 

Preparation
  1. Cook the orzo pasta according to package instructions. Drain and set aside.
  2. In a large mixing bowl, combine the cherry tomatoes, cucumber, red onion, olives, pepperoncini, and artichoke hearts.
  3. Add the cooked orzo to the mixing bowl.
  4. In a separate bowl, whisk together the olive oil, red wine vinegar, oregano, salt, and black pepper.
  5. Pour the dressing over the salad and toss to combine.
  6. Serve chilled or at room temperature.
