  • 2 cups fresh mushrooms (sliced, such as cremini or shiitake)
  • 2 leeks (trimmed and sliced)
  • 1 cup heavy cream
  • 1 tsp fresh thyme (or 1/3 tsp dried thyme)
  • Salt and pepper to taste
  • 2 tbsp butter or olive oil

Instructions

  1. Preheat oven to 375°F (190°C). Clean and slice mushrooms; trim and chop leeks.
  2. In a skillet over medium heat, melt butter or olive oil. Sauté leeks until soft, about 5 minutes, then add mushrooms until golden brown.
  3. Pour in heavy cream, thyme, salt, and pepper. Stir and simmer for about 5 minutes until thickened.
  4. Roll out puff pastry on a floured surface; fit half into a pie dish. Add mushroom mixture.
  5. Cover with another sheet of puff pastry, seal edges, and cut slits for steam.
  6. Bake for 25-30 minutes until golden brown. Cool slightly before serving.
