  • 1 cup frozen mixed vegetables
  • 1 sheet puff pastry, thawed
  • 1 cup low-sodium chicken broth

  • 2 garlic cloves, minced
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C) and prepare muffin tin with nonstick spray.
  2. In a skillet over medium heat, sauté chopped onion in oil until translucent (about 5 minutes). Add minced garlic and cook for an additional minute.
  3. Add diced chicken to the skillet; season with salt, pepper, and thyme. Cook until no longer pink (about 7 minutes).
  4. Stir in frozen vegetables, chicken broth, and heavy cream; simmer for about 5 minutes until slightly thickened.
  5. Cut puff pastry into squares and press into muffin tin cups. Fill with chicken mixture almost to the top.
  6. Bake for 20-25 minutes until golden brown. Allow cooling slightly before serving.
