  • 1 medium green or purple cabbage, cut into wedges
  • 2 tbsp extra virgin olive oil (for roasting)
  • 3 tbsp extra virgin olive oil (for vinaigrette)
  • 2 tbsp red wine vinegar
  • 1 tsp Dijon mustard
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. 1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. 2. Toss cabbage wedges with 2 tbsp olive oil, salt, and pepper. Arrange on the baking sheet.
  3. 3. Roast cabbage for 25-30 minutes until charred but tender.
  4. 4. In a bowl, mix 3 tbsp olive oil, red wine vinegar, Dijon mustard, minced garlic, salt, and pepper; whisk until emulsified.
