  • 2 medium fresh beets (about 1 cup diced)
  • 4 cups low-sodium vegetable broth
  • 1/2 cup dry white wine
  • 1 small onion (finely chopped)
  • 2 cloves garlic (minced)
  • 4 oz fresh goat cheese (crumbled)
  • 1/4 cup freshly grated Parmesan cheese
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Wrap whole beets in aluminum foil and roast until tender, about one hour. Cool, peel, and dice.
  2. In a large skillet over medium heat, heat olive oil. Add onion and sauté until translucent. Stir in garlic and cook until fragrant.
  3. Add Arborio rice to the skillet and toast for about two minutes.
  4. Deglaze with white wine, stirring until absorbed.
  5. Gradually add vegetable broth one ladle at a time, stirring continuously until absorbed before adding more. Cook for about 20 minutes until creamy yet al dente.
  6. Fold in roasted beets, goat cheese, and Parmesan. Season with salt and pepper to taste.
