  • 3 large eggs
  • 1/2 cup vegetable oil
  • 1 cup water
  • 2 cups frozen mixed berries (strawberries, blueberries, raspberries)
  • 3 oz berry-flavored gelatin
  • 1/2 cup milk
  • 1 cup whipped topping (store-bought or homemade)
  • Fresh berries for garnish (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish with nonstick spray.
  2. In a large bowl, combine the cake mix, eggs, vegetable oil, and water. Mix until smooth; pour into the prepared baking dish.
  3. Bake for 30-35 minutes or until golden brown and a toothpick comes out clean. Let it cool for about 10 minutes.
  4. While the cake cools, heat frozen berries with milk in a saucepan over medium heat for about 5-7 minutes until juicy. Stir in gelatin until dissolved.
  5. Poke holes all over the top of the warm cake using a fork or skewer and pour the berry mixture evenly over it.
  6. Allow to cool at room temperature for an hour so the flavors soak in.
  7. Top with whipped topping and garnish with fresh berries before serving.
