  • 1 cup ricotta cheese (240g)
  • ½ cup grated Parmesan cheese (50g)
  • 4 tbsp unsalted butter (56g)
  • 2 cloves garlic, minced

Instructions

  1. Prepare the Beet Dough: Boil or roast beetroots until tender. Cool, peel, and blend until smooth. Mix flour, eggs, and half a cup of beet puree in a bowl. Knead until smooth, wrap in plastic wrap, and let rest for 30 minutes.
  2. Make the Mushroom Filling: Sauté chopped mushrooms in butter over medium heat until golden brown. Add minced garlic and cook for an additional minute. Let cool, then mix with ricotta and Parmesan.
  3. Roll Out the Dough: Divide dough into four pieces and roll out thinly using a pasta machine or rolling pin.
  4. Assemble Tortellini: Cut rolled dough into squares. Place one tablespoon of filling in each square, fold diagonally to form triangles, and pinch edges to seal.
