  • 1 cup water
  • 1 cup cornstarch
  • 1/2 cup rosewater or orange blossom water
  • 1 tablespoon lemon juice

Instructions

  1. Prepare your workspace by gathering all ingredients and tools, including a saucepan and a baking dish lined with parchment paper.
  2. In a saucepan, combine granulated sugar and water over medium heat. Stir until dissolved, then bring to a gentle boil until it reaches 240°F (115°C).
  3. While boiling, mix cornstarch with a bit of water in a bowl until smooth. Gradually whisk this mixture into the boiling syrup to avoid lumps.
  4. Reduce heat to low and add rosewater (or orange blossom water) and lemon juice. Stir continuously until thickened.
  5. Pour the mixture into the prepared baking dish and spread evenly. Allow cooling at room temperature for several hours until fully set.
  6. Once set, dust with cornstarch on a cutting board before slicing into squares. Dust each piece lightly to prevent sticking.
