  • 2 cups cooked chicken, shredded
  • 8 medium soft flour tortillas
  • 2 cups Swiss cheese, shredded
  • 1 can (10.5 oz) cream of mushroom soup
  • 1/2 cup sour cream
  • 1 can (4 oz) green chiles, diced
  • 1/2 cup low-sodium chicken broth

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly spray a baking dish with nonstick cooking spray.
  2. In a large bowl, combine cooked chicken, drained green chiles, half of the Swiss cheese, and half of the cream of mushroom soup.
  3. Spoon about a third of a cup of filling onto each tortilla, roll them tightly, and place seam-side down in the baking dish.
  4. Mix remaining cream of mushroom soup with chicken broth and pour it over the assembled enchiladas. Top with remaining Swiss cheese.
  5. Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 10 minutes until bubbly and golden.
  6. Let cool slightly before serving with a dollop of sour cream.
