  • 1 lb lean ground turkey
  • 1 cup dried cranberries
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Scrub the sweet potatoes, dry them, and poke holes in each.
  2. Roast the sweet potatoes directly on the rack or on a lined baking sheet for 45-60 minutes until tender.
  3. While roasting, heat olive oil in a skillet over medium heat. Sauté onion and garlic until soft (about 3 minutes).
  4. Add ground turkey, cinnamon, nutmeg, salt, and pepper; cook until browned.
  5. Stir in dried cranberries and cook for another 2-3 minutes.
  6. Slice open roasted sweet potatoes lengthwise, fluff the flesh with a fork, and fill with the turkey-cranberry mixture.
