  • 1 box (15.25 oz) Red Velvet Cake Mix
  • 2 large Eggs
  • ½ cup Vegetable Oil
  • 1 cup Water
  • 8 oz Cream Cheese, softened
  • 2 cups Powdered Sugar
  • 2 cups Chocolate Chips (dark or milk)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour an 8-inch round cake pan.
  2. In a bowl, mix the cake mix, eggs, oil, and water until smooth. Pour into the prepared pan and bake for 25-30 minutes or until a toothpick comes out clean. Let cool completely.
  3. Crumble the cooled cake into fine crumbs in a large bowl. Beat cream cheese and powdered sugar until smooth, then combine with the crumbled cake.
  4. Roll the mixture into bite-sized balls (about 1 inch) and place on a parchment-lined baking sheet.
  5. Refrigerate truffles for at least 1 hour to firm up.
  6. Melt chocolate chips in a microwave-safe bowl or double boiler. Dip each chilled truffle in chocolate and place back on parchment paper to set.
