  • 1 ½ cups almond flour
  • ¼ cup coconut oil (melted)
  • ¼ cup maple syrup
  • 1 cup pomegranate seeds (fresh)
  • 1 cup brewed hibiscus tea (from dried flowers or tea bags)
  • 2 tbsp lemon juice (freshly squeezed)
  • Additional maple syrup (to taste)

Instructions

  1. Preheat oven to 350°F (175°C). Grease an 8-inch tart pan.
  2. In a bowl, mix almond flour, melted coconut oil, and maple syrup until crumbly. Press firmly into the tart pan and bake for 10-12 minutes until golden brown.
  3. Steep hibiscus tea in hot water for five minutes. In another bowl, combine pomegranate seeds, lemon juice, steeped tea, and extra maple syrup if desired.
  4. Pour filling into the cooled crust and spread evenly. Bake for an additional 15-20 minutes until set.
  5. Cool at room temperature before slicing. Enjoy chilled or at room temperature.
