  • 8 oz pasta of your choice (penne, fettuccine, or gluten-free)
  • 1 cup raw cashews (soaked)
  • 2 cups ripe tomatoes (chopped)
  • 3 cloves garlic (minced)
  • 2 cups baby spinach
  • 1/4 cup nutritional yeast
  • 2 tbsp extra virgin olive oil
  • 2 tbsp lemon juice
  • Salt to taste

Instructions

  1. Soak cashews in water for at least two hours or boil them for about ten minutes until soft. Drain and rinse.
  2. Cook pasta according to package instructions until al dente, then drain and set aside.
  3. In a skillet over medium heat, add olive oil and sauté minced garlic until fragrant (about one minute). Add chopped tomatoes and cook until softened.
  4. In a blender, combine soaked cashews, sautéed tomatoes and garlic, nutritional yeast, lemon juice, and salt. Blend until smooth and creamy.
  5. In the skillet with the tomato mixture, add drained pasta and fresh spinach. Pour cashew cream over everything and gently mix on low heat for about two minutes.
  6. Serve warm, garnished with additional spinach or nutritional yeast if desired.
