  • 1 cup chopped pecans
  • 3/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1/4 tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a mini muffin tin.
  2. Roll out the pie crust on a floured surface to about an eighth-inch thick and cut circles to fit each muffin cup.
  3. In a mixing bowl, whisk together eggs, brown sugar, granulated sugar, vanilla extract, and salt until smooth. Stir in chopped pecans.
  4. Place dough circles into the muffin tin and fill each with the pecan mixture until three-quarters full.
  5. Bake for 20-25 minutes until golden brown and puffed.
  6. Cool for five minutes before transferring to a wire rack. Serve warm or at room temperature.
